The year 2014 marked the beginning of the 'Ciatò' story, a year in which winter seemed never to end, followed by a cool spring and a hot summer, the grapes were full of aromas and we were full of joy.
Everything at first light, suddenly nature became poetry thanks to the chirping of countless birds, the only noise was the cutting of the scissors used. The crushing done by hand, attentive to the integrity of the grapes, berry by berry.
Memories that we now relive in our Black Edition Vendemmia 2014, through its aromas and bubbles.
Technical data:
Grape: 100% Nero di Troia
Production zone: Castelluccio dei Sauri (Italy
Acreage planted: 4 acres.
Exposure: North - North West, and South - South East, 300 meters above sea level
Soil type: gravelly, calcareous, and of medium consistency in the hills, not irrigated.
Vineyards: espalier system with Guyot pruning.
Planting density 3500 plants per hectare. Yield per hectare 80 quintals.
Harvest period: second decade of August, with manual harvesting and selection of the grapes
Winemaking: destemmed by hand, soft pressing and subsequent fermentation at controlled temperature (14-15°) in stainless steel tanks.
Bottling: the tirage is carried out in spring following the harvest.
Maturation in the bottle for at least 84 months in temperature-controlled rooms.
BLACK EDITION only the best vintages are selected for the Black Edition label, with strictly numbered bottles.
Characteristic: antique pink in colour, elegant and distinguished, with considerable depth and breadth; the long resting period gives elegance and unique expressions of Nero di Troia.
Pairings: Recommended as an aperitif, suitable for land and sea starters, in particular shellfish and tuna, carpaccio and meat tartare, throughout the meal with creamy and vegetable first courses, main courses of seafood and white and red meats with good fatness, grilled lamb, pork, seared tuna, tasty vegetables, omelettes, creamy cheeses, mushrooms and pizzas with good seasoning.
Serving temperature 6-8 °C.
