Description

Borage with anchovies in extra virgin olive oil.

Wild borage grows wild in the fallow land of Casa Iuorio's farm. The leaves, freshly picked, are processed by hand in our workshop.

Ingredients:

  • borage;
  • extra virgin olive oil;
  • anchovies in sunflower oil (anchovies, sunflower oil, salt);
  • salt;
  • white wine vinegar;
  • garlic;
  • hot chili pepper.

                  Preservative- and color-free.

                  Pairings

                  It can be used as a side dish, to fill gourmet sandwiches, to season all kinds of pasta (fresh, stuffed), to prepare tasty fresh pasta fillings by mixing it with fresh cheeses such as ricotta, crescenza, stracchino.

                  Once the jar has been opened, keep it in the fridge at max. +5 °C and consume within 2 weeks. During consumption, cover the remaining product in the jar with a drizzle of extra virgin olive oil.

                    Growing vegetables

                    Borage grows wild in the farm's fields, where they practice sustainable agriculture, respecting the cycles of the earth and the seasons. The harvesting of the leaves - done by hand, without the aid of mechanical means - takes place in the fallow fields, during crop rotation.

                    This is also their commitment to promoting the biodiversity of the land. Their cultivations are done in the open field and without the use of chemical agents, on our land in Palomonte (SA).

                    Processing

                    After the leaves have been harvested, it is always Casa Iuorio farm that takes care of the processing, in the farm's own workshop, a sort of large kitchen in the middle of the fields, certified according to all health and hygiene regulations.

                    The leaves are selected, washed under running water, and then prepared by the expert hands of properly trained local women. Immediately after harvesting. The jars are also prepared by hand, right up to the labeling.
