The black tomato owes its particular color to the high concentration of lycopene, a substance that performs an important antioxidant function, against the aging of our cells.
Ingredients:
- tomato variety Nerondo;
- sugar;
- white wine vinegar;
- onion;
- extra virgin olive oil;
- corn starch;
- crushed peppers in flakes;
- whole sea salt;
- wheat flour type '00';
- mix of spices and herbs.

Pairings
It can be consumed in the most popular way, with chips, but also to add flavor to sandwiches.
Once the jar has been opened, the product can be kept in the refrigerator at +5 °C for up to 1 week.
Growing tomatoes
Casa Iuorio's tomatoes are the result of sustainable agriculture, with a zero-meter chain. They are grown in the open field and without the use of chemicals, on their land in Palomonte (SA). Harvesting is done by hand, without the use of mechanical means.
Processing
After the harvest, Casa Iuorio farm takes care of the processing, in the workshop next to the fields.
The tomatoes are selected by choosing only those that are ripe at the right point, washed under running water, and then prepared by the expert hands of suitably trained local women. Immediately after the harvest. The jars are also prepared by hand, right up to the labeling.
