I'm going to be truly honest here, there is no better dish to prepare than the bruschetta.
It is simple, easy, you can do it as you like with what you like and it will always taste amazing.
In my town the bruschetta is a traditional dish, a dish of the poor, at the end it was just toasted stale bread, with some garlic, tomatoes, and of course olive oil.
Every family has then their own way to do it, with chopped tomatoes, by rubbing the tomatoes on the bread, using cherry tomatoes, or just tomatoes. We are not going to start a war, we will give you both recipes, and from there you can create your own.
The only thing that we would like to remind you is that you have to source the best products in order to have the best result.
RECIPE
For 2 people
Ingredients
- 4 slices of sourdough bread (you can also use the baguette if you prefer, in this case please use as many "slices" as you would like)
- tomatoes (we prefer cherry tomates)
- 1 garlic head
- extra virgin olive oil
- salt & pepper
- basil (if you like it)
Preparation
Version 1
- Preheat the oven, possibly in grill function.
- Chop the tomatoes, the garlic and the basil and mix all together in a bowl with olive oil and salt and pepper.
- Grill the bread for a couple of minutes on each side.
- Place the bread on the plate and pour over the chopped tomatoes.
Version 2
- Preheat the oven, possibly in grill function.
- Remove the head of the tomatoes, peal the garlic and break with your hand the basil.
- Grill the bread for a couple of minutes on each side.
- Place the bread on the plate first rub it with the garlic on each side, then with the tomatoes (you might need to use several per side).
- Once you have finished, season it with some olive oil, salt, pepper and the basil
As I've told you before, it is pretty easy, but now the best part arrives. You can accompany the bruschetta with some cold cuts, with under-oil vegetables or with some cheese! And in case you prefer to rub the tomatoes, do not throw them away! You can use them as a side dish, seasoning them with some olive oil and salt, or reuse them the next day to make a tomatoes sauce.
In my hometown (Vieste) we serve it with melted Caciocavallo cheese and some black olives.
